Ingredients
3pkg Veal Slices
1Tbl Olive Oil
3oz Crimini mushrooms
1Tbl Capers
3Tbl Butter
3Tbl Flour
¼ c White wine
¼ c Chicken stock
Taste Salt and Pepper
1cl Garlic - chopped
1 Lemon juiced
1box Rice River Farms Calico Blend Rice,
A hearty blend of dry roasted wild rice, brown rice and wheat berries. Directions on the box just add water and cook.. Whole grain, delicious and convenient.
Preparation
Prepare Calico Rice.
In a preheated skillet with the oil
Add the veal to the skillet and cook for about 3-4 minutes per side or until done. Remove and side aside and keep warm
Preheat a sauce pot and add 3Tbl butter and the mushrooms
Sauté for 3-4 minutes
Add the garlic and sauté for another 30 seconds.
Add the flour and stir together, once the roux is formed, whisk in the white wine and stock and let reduce and thicken for at least 15 minutes.
Add the capers and lemon juice and season with salt and pepper to taste.
In a preheated skillet add the olive oil
Assemble the plate with a portion of rice topped with the veal and the sauce.
